Yields 2 cups coconut milk
Ingredients:
1.5 cups shredded coconut
3 cups filtered water
Directions:
1. Briefly soak the coconut in the water (3-5 minutes will do)
2. Blend water + shredded coconut in a high powered blender
3. Strain with a fine mesh strainer
